2 lbs.   Choice Tri-Tip Beef, Cubed
1 lb.   Fresh, Raw Peeled and De-Veined Shrimp (about 16–20 Shrimp)
1⁄2 lb.   Fresh Scallops
3   Green, Yellow or Red Bell Peppers (Seeded)
2   Red Onions
12 12˝   Skewers (if Using Wood, Pre-Soak in Water to Prevent Splintering)
16 oz.   Favorite Beef and Seafood Marinade

Cut beef and vegetables into 1-inch square pieces then place on skewers alternating the meat and vegetables. For example, first beef, a square of bell pepper, another piece of beef, red onion, beef, bell pepper, etc.

Do the same thing with the seafood alternating shrimp with vegetables and then the scallops with vegetables.

After skewers are assembled, place the beef skewers in your favorite beef marinade and marinate for at least 4 hours. Take the seafood skewers and place them in your favorite seafood marinade and marinate for at least 4 hours.

Your skewers are ready to be placed on a hot grill. Make sure your grill is hot so the skewers do not stick. Grill each side for 2 minutes.

These skewers go great with your favorite summer side dishes like potato salad, couscous, and green salad or served over steamed rice.

Adding fresh fruit (like pineapple or peaches) to your skewers will also bring out more flavors of the meat or fish that you are using.
